Hence its name: \"kuki\" in Japanese means stem or stick. Kukicha is produced in the production of other green teas, when the leaf blades are separated from the rest of the tea. Its flavor is therefore distinctly different: more delicate, sweeter, and slightly nutty. Due to its low caffeine content, kukicha is perfect for children, pregnant women, and late hours of the day. For this reason, it is also, along with a generous cup of tea, often recommended in a macrobiotic diet. Kukicha also has a high content of the relaxing theanine. Theanine in the leaves is converted into tannins during photosynthesis, which give the tea a \"bitter\" aftertaste. Since photosynthesis does not take place in the stems, they are naturally rich in theanine. Moya Kukicha is the highest quality kukicha, produced during the matcha production process when the leaves and stems are separated from the aracha (tea leaves - semi-finished matcha). Unlike regular kukicha, it is very delicately roasted (much shorter than hojicha).
