Borscht is a very popular soup in many Central European countries, based on a decoction prepared from beets and bones, sprinkled with sour beetroot. Usually served with potatoes, cabbage and mushroom dumplings, or pâté, or as a drink to wash down with, for example, croquettes, red borscht is a traditional dish served at Christmas Eve dinner.
