Cocoa is prepared using the Dutch process (alkalized), which makes it less acidic and bitter, has a more pronounced color, and dissolves better in water. Since it is milder, it blends better with other flavors in dishes. The lower fat content makes cocoa lower in calories. Thanks to alkalization, cocoa has a neutral pH (7-8), so it should be used in recipes that call for baking powder (not baking soda).
