Celery (Apium L.) is a plant of the celery family, comprising about 19 species. Most of them grow in South America, with only celery (Apium graveolens L.) being widespread - it grows wild in Europe and is also widely cultivated, including in Poland.
Celery, due to its pronounced aftertaste, is used as a spice and is also an excellent addition to meat and vegetable dishes. It is one of the lowest-calorie vegetables, contains twice as much vitamin C as citrus fruits and is also an excellent source of riboflavin, calcium, vitamin B6, magnesium, phosphorus, potassium, vitamins A and K, and dietary fiber.
Celery is the healthiest raw vegetable, but only heat treatment brings out its unique flavor. To retain as much nutritional value as possible, it's best not to simmer it. Instead, steam the vegetables.
