Horseradish (Armoracia rusticana) is a root vegetable found in Europe, North America, New Zealand, and parts of Asia. It is a member of the cruciferous family. Used worldwide for thousands of years, horseradish is an exceptionally healthy plant with numerous culinary and health-promoting properties.
Horseradish boasts, among other things, its content of vitamin C, which supports immunity, B vitamins necessary for the body's proper functioning, vitamin K and calcium for bone strengthening, and magnesium, which supports the nervous system. It can improve digestion and speed up metabolism, making it recommended for people who eat heavy and fatty foods and for those on a weight-loss diet.
Horseradish was well-known and appreciated in ancient Polish cuisine. Served with dripping meats, it was believed to reduce digestive upsets caused by them. For a long time, it was also an essential part of Easter.
