SPELT can be ground to obtain wholemeal SPELT flour, suitable for baking bread and cakes. Cooked and blended SPELT is an excellent base for escalopes and spreads. PREPARATION Boil the SPELT, previously soaked for several hours and rinsed, in fresh salted water in a ratio of 1:3 (1 part SPELT to 3 parts water) for about 90 minutes.
