Kutia is a traditional dish of Ukrainian, Belarusian, Russian, Lithuanian, and former Polish border cuisine. It is one of the 12 dishes usually included in the East Slavic Christmas Eve dinner. It is prepared from wheat, poppy seeds, honey, and dried fruits; it may also contain milk, cream, malt, candied fruit peel, and almonds.
Spelt is a wheat grain. Popular in the Middle Ages, then forgotten, it is now making a comeback due to its many nutritional values, the highest compared to other cereals. 100g of spelt covers 30% of the daily requirement of fiber and 21% of protein.
