Eryngii mushrooms, also known as king oyster mushrooms, steppe oyster mushrooms, or St. Nicholas oyster mushrooms (Pleurotus eryngii (DC.) Quél), are a species of edible mushrooms cultivated in many European and Asian countries. They differ from their cousins ​​in the oyster mushroom family by having a larger fruiting body.
King oyster mushrooms are prized for their taste and health benefits. They boast, among other things, a protein content with exogenous amino acids, which our bodies cannot produce on their own, and B vitamins. They can support immunity and strengthen blood vessels.
In terms of taste, steppe oyster mushrooms are compared to wild mushrooms. These exotic, delicate mushrooms are perfect as an addition to sauces, scrambled eggs, and casseroles. They are also an excellent meat substitute in a vegetarian diet.
