Fermented Soybeans - Japanese Food for Thousands of Years

Fermented soybeans (natto) are traditionally consumed in Japan. It is obtained by fermenting soybeans with the bacterial strain Bacillus subtilis (natto). These bacteria, by acting on the soy protein, create the enzyme nattokinase. It does not contain vitamin K.
