In India, where this mysterious flavor ingredient originates, however, the term is much more ambiguous; it refers to the method of seasoning dishes, but also to the sauce that coats the main dish. Green curry paste is a blend of Thai spices with a distinct hint of chili and lemongrass. Its green color comes from green chilies. It tastes great with the addition of coconut milk, vegetables, and meat or its substitute. Served with rice or bread, naan creates a delicious, exotic dish. It pairs perfectly with pasta and tofu, and is delicious when fried with vegetables.
