Yacon originates from South America and has only recently been cultivated in Europe. Valued for its sweet, crunchy edible fruit, yacon, along with chicory and Jerusalem artichoke, belongs to the Asteraceae family and resembles a sweet potato in appearance. Its sweet yacon flavor is due to its high fructo-oligosaccharide content. Made from the tuber, yacona , a fruity caramel syrup can be used as a healthier sugar substitute; in a weight-loss diet, it can also replace honey or maple syrup due to its low calorie content. Yacon syrup improves calcium absorption and is rich in B vitamins. Recommended for sweetening juices, yogurts, cocktails, ice cream, fruit salads, and cakes.
